Use any veggie mix, You can also add bacon or even left over roast. If you want it a bit thicker add some cornflour (mix a tablespoon of cornflour with 3 tablespoons cold water. Spoon some soup into the mix to bring the temp up then stir into soup pot and bring to boil then simmer) If extra people show up add more stock. Tastes better the next day.
Ingredients (serves 6)
- 2 Cans Baked beans
- 1 Can Diced Tomatoes
- 2 Cups Stock (any flavour will do)
- 2 Carrots
- Chunk Pumpkin
- 2 Potatoes
Method
- Chop all vegies into bite size chunks - you can use pretty much any veggies in the house for this one
- Bring stock to the boil - you may need to add a bit of water. Toss in veggies, cook til soft. Add cans, simmer for half hour and serve with grilled bread.
