Use any veggie mix, You can also add bacon or even left over roast. If you want it a bit thicker add some cornflour (mix a tablespoon of cornflour with 3 tablespoons cold water. Spoon some soup into the mix to bring the temp up then stir into soup pot and bring to boil then simmer) If extra people show up add more stock. Tastes better the next day.


Ingredients (serves 6)

  • 2 Cans Baked beans
  • 1 Can Diced Tomatoes
  • 2 Cups Stock (any flavour will do)
  • 2 Carrots
  • Chunk Pumpkin
  • 2 Potatoes

Method

  1. Chop all vegies into bite size chunks - you can use pretty much any veggies in the house for this one
  2. Bring stock to the boil - you may need to add a bit of water. Toss in veggies, cook til soft. Add cans, simmer for half hour and serve with grilled bread.

  • What an interesting recipe. I’ve never thought of adding baked beans into soup before. I guess it’s just white beans with extra flavouring. I’ve been making a lot of soup lately. The favourite currently is pasta e fagioli, pasta and bean soup. Its to easy, delicious and filling and freezes well

  • A vegetable soup is always a winner in winter although I am not sure about the baked beans, I think i would replace these with another type of bean. I would also include some celery to give it another texture to the soup. Celery in soup is always a winner in my books.

  • It really doesn’t get much better than a big bowl of vegetable soup on a cold winters day and what I love the most about it is that its a fantastic way to use up all the vegetables you have left at the end of the week so there’s no wastage. 🙂
