Ingredients
- 1/3 cup Paul Newman's Own Ranch Salad Dressing
- 800g baby white potatoes, halved lengthwise
- 2 tablespoons chopped rosemary leaves
- 2 tablespoons thyme leaves
- pinch of salt
- 200g hot and spicy chorizo, thinly sliced
- 4 spring onions, cut into 5cm lengths, thinly sliced and soaked in cold water until curly
- 2/3 cup extra Paul Newman's Own Ranch Salad Dressing
- 1/2 cup chives cut into 2.5cm lengths
Method
- Combine in a bowl the dressing, potatoes, rosemary, thyme and salt, mix well to combine. Place onto a paper lined baking tray and bake at 180 degrees for 30-35 minutes or until the potatoes are tender and golden.
- Pan fry the chorizo in a non stick pan over a medium heat for 6-8 minutes or until crispy. Drain well.
- Place the potatoes into a serving bowl with the chorizo. Drain the spring onions and toss through the salad. Drizzle over the dressing and sprinkle with the chives. Serve immediately .
