Ingredients

  • 1/3 cup Paul Newman's Own Ranch Salad Dressing
  • 800g baby white potatoes, halved lengthwise
  • 2 tablespoons chopped rosemary leaves
  • 2 tablespoons thyme leaves
  • pinch of salt
  • 200g hot and spicy chorizo, thinly sliced
  • 4 spring onions, cut into 5cm lengths, thinly sliced and soaked in cold water until curly
  • 2/3 cup extra Paul Newman's Own Ranch Salad Dressing
  • 1/2 cup chives cut into 2.5cm lengths

Method

  1. Combine in a bowl the dressing, potatoes, rosemary, thyme and salt, mix well to combine. Place onto a paper lined baking tray and bake at 180 degrees for 30-35 minutes or until the potatoes are tender and golden.
  2. Pan fry the chorizo in a non stick pan over a medium heat for 6-8 minutes or until crispy. Drain well.
  3. Place the potatoes into a serving bowl with the chorizo. Drain the spring onions and toss through the salad. Drizzle over the dressing and sprinkle with the chives. Serve immediately .

  • My kids have recently discovered the delights of potato salad (I like it but only eat it sparingly because Carbs). I am definitely going to try this variation on them – it looks like it would work as either a side or a light main on a really hot day. Thanks.

  • We often purchase this ranch product and find it so great with chicken wraps but have never used it in a salad style setting. It looks so simple and I can only see how much flavour it would add and how well it would pair with potatoes. Definitely will be trying

  • I thought I could tweak this into a new and interesting vegetarian potato salad, but there are some very strong flavours here in addition to the horizon! Rosemary? And Thyme? This isn’t really for me… but pro tip for other potato salad lovers… roast your spuds, then add corn, fresh parsley, spring onions and your favourite condiment

  • Well I tried this one and it surprised me how well it went. Lots of good comments so I guess it will be a favourite to make again and again. I did leave out the chorizo (sorry not a fan of too hot and spicy) however it still turned out good.

  • This Herbed Ranch Baked Potato Salad with Crispy Chorizo sounds absolutely divine! I’m craving the creamy potatoes, the zesty ranch, and the salty, crispy chorizo. It would be a perfect comforting yet flavorful dinner option or when having a BBQ. I’d love a big bowl of the salad right now as it is dinner time.

  • I’m afraid potato salad is not really favoured in our house. With 3 vegetarians in the house I certainly wouldn’t prepare a sald with chorizo, but you could omit this with a vegetarian substitute such as for example a vegi delight hot dog. We’re not into dressings either, so would certainly skip the Ranch Salad Dressing of Paul Newman

  • I’m vegetarian, so ditched the chorizo! But I do LOVE a Roasted potato salad… the baking really changes up the flavour and texture. For a fun and delicious summer twist, I like to add char grilled corn kernals! I have tu about, this isn’t even a side dish, I’ll just each a bowl for dinner!

  • I make a similar recipe but with crispy diced bacon. I would like to try it with the chorizo but will probably use a mild chorizo instead

  • Looks so good but I’m not sure about including the hot and spicy churizo. I guess it could be made without that ingredient and still be a delicious recipe. I will have to give this a go and see. Great to have a nice potato salad in the warmer weather. Thank you.

  • Potatoes and chorizo sign me up! What a tasty combo and a great untraditional take on the classic potato salad! I am loving these protein packed filling salads recipes. This would be perfect for work lunches or the family BBQ. I’d add some warm shavings on top too for some extra indulgence.

  • This sounds so good. Perfect as side with chicken or steak or even prawns. This one looks a winner and I’m definitely going to try it. The Paul Newman dresses are really tasty and how good is it to know that buying a salad dressing can help a charity?
    I’m thinking that you could even add in some baby spinach leaves for even more nutrition and colour.

  • This sounds absolutely delicious! I can’t eat pork products, but my local Coles does do a good range of beef products like pepperoni, so I’m sure I could find a substitute. I absolutely love a good potato salad! It’s the perfect picnic food when the weather is hot. It’s just refreshing!

  • I’m back to get the recipe! I’ve been thinking about this since I read the recipe and I’m so keen to make it on Christmas Day. I’ll give it a go this week, just to make sure it’s as delicious as it sounds. I’m craving potato’s, chorizo and ranch dressing so bad atm lol

  • I made this recipe and took out the spicy chorizo and swapped for salmon slices and swapped the thyme leaves for Dill. It looked amazing and festive. I will make both for our Christmas lunch as to please the members who love spicy chorizo and those who don’t. So many options with a good base of Potatoes and Paul Newman’s Own Ranch Salad Dressing.
