Ingredients

  • 1/3 cup Paul Newman's Own Ranch Salad Dressing
  • 800g baby white potatoes, halved lengthwise
  • 2 tablespoons chopped rosemary leaves
  • 2 tablespoons thyme leaves
  • pinch of salt
  • 200g hot and spicy chorizo, thinly sliced
  • 4 spring onions, cut into 5cm lengths, thinly sliced and soaked in cold water until curly
  • 2/3 cup extra Paul Newman's Own Ranch Salad Dressing
  • 1/2 cup chives cut into 2.5cm lengths

Method

  1. Combine in a bowl the dressing, potatoes, rosemary, thyme and salt, mix well to combine. Place onto a paper lined baking tray and bake at 180 degrees for 30-35 minutes or until the potatoes are tender and golden.
  2. Pan fry the chorizo in a non stick pan over a medium heat for 6-8 minutes or until crispy. Drain well.
  3. Place the potatoes into a serving bowl with the chorizo. Drain the spring onions and toss through the salad. Drizzle over the dressing and sprinkle with the chives. Serve immediately .

  • This sounds absolutely delicious! I can’t eat pork products, but my local Coles does do a good range of beef products like pepperoni, so I’m sure I could find a substitute. I absolutely love a good potato salad! It’s the perfect picnic food when the weather is hot. It’s just refreshing!

  • I’m back to get the recipe! I’ve been thinking about this since I read the recipe and I’m so keen to make it on Christmas Day. I’ll give it a go this week, just to make sure it’s as delicious as it sounds. I’m craving potato’s, chorizo and ranch dressing so bad atm lol

  • I made this recipe and took out the spicy chorizo and swapped for salmon slices and swapped the thyme leaves for Dill. It looked amazing and festive. I will make both for our Christmas lunch as to please the members who love spicy chorizo and those who don’t. So many options with a good base of Potatoes and Paul Newman’s Own Ranch Salad Dressing.

  • Ok ok ok, this looks so yummy and easy to make! I have never seen this with charizo, what a great ingredient to add. I Love that this has a little something different. Also a baked potato salad is great, not just a normal potato salad. This one I need to try.

This potato salad with Chorizo looks particularly appetising and well worthy of a try next time I am making salads and having friends over for a meal.   • This Herbed Ranch Baked Potato Salad With Crispy Chorizo looks delicious. I like Paul Newman’s Own Ranch Salad Dressing. The only thing I would leave out is the rosemary and thyme leaves but I do love spring onions. The salad would go well with a piece of steak for dinner.

  • This recipe looks very tasty, I absolutely love Chorizo & what a nice addition to a lovely potato salad, I don’t have fresh thyme leaves, wondering if dried leaves would work as well? I will definitely will be trying this recipe, maybe a nice addition to our Christmas table feast.

  • This is probably the best sounding recipe I’ve read in a long time and just in time for summer! Potato’s and chorizo are such a vibe, and the ranch dressing is something I have a lot. I’m so keen to give this one a go. Sweet potato might be a nice twist on this as well.

  • I’m not a fan of dressings, in fact no-one in our house likes dressings.
    With four vegetarians in the house it’s highly unlikely I would ever use chorizo in a salad. I would add a bunch of veggies to the salad as it only contrains potatoes, chives and onions from the vegetable group

  • Wow now this is my kind of dish. I already make something very similar to this but with bacon. Adding chorizo with the potatoes would be a game changer and would really make this dish have a wow factor. It looks very simple and easy to make. I will give this a go as I love a good potato salad in summer especially with a bbq.

  • This looks amazing and I can’t wait to try it out. You can’t get better than potato’s and chorizo. Thanks for providing this recipe. Just thinking maybe a bit of cheese and chicken would go nicely with this salad. With these additions and a bit of fresh crusty bread it would make a whole meal.
