You can also add 1/2 teaspoon of mixed spices, cinnamon or nutmeg. Beautifully moist cake – store in an airtight container, but put baking paper underneath.


Ingredients (makes 1 cake)

  • 2 Eggs
  • 1 Cup Sugar
  • 3/4 Cup Vegetable Oil
  • 3/4 Cup Honey
  • 1/2 Teaspoon Baking Soda
  • 1/2 Teaspoon Cloves
  • 2 Tablespoons Cocoa
  • 1 Cup Plain flour
  • 1 Cup Self raising flour
  • 1 Cup Boiling water

Method

  1. Preheat oven to 375f or 190c.
  2. Mix eggs and sugar.
  3. In the following order mix in oil, honey, baking soda, cloves, cocoa then flour. Add the boiling water last.
  4. Bake for 1 to 1 1/4 hours. Lower heat to 350 (180) after the first half hour. Lower heat again to 325 (150) for the last 10 minutes.
  5. Sift iciing sugar over the top once cool

A friend of mine has her own bees, and makes this with homemade honey - lovely with a cuppa

  • I’ve never actually tried honey cake. When I saw this post I automatically thought of bananas in pajamas! Where all the characters are obsessed with them. My kids have all loved the show so im sure they’d like to try some honey cake and this one sounds really great. Thanks for sharing this recipe 🙂
