Lovely served warm with whipped cream
Ingredients (makes 1 cake)
- 3 Eggs
- 1 1/4 Cups Castor Sugar
- 1/2 Cup Vegetable Oil
- 1 Cup Honey
- 3/4 Cup Cold strong coffee
- 4 Cups Flour
- 2 teaspoons Baking Powder
- 1 teaspoon Salt
- 1 teaspoon Baking Soda
- 1/2 teaspoon each Nutmeg, Ginger and Allspice
- 1/2 Cup Broken Nuts (optional)
Method
- Cream together eggs and sugar. Slowly add oil then honey and continue beating
- Add sifted dry ingredients, alternating with coffee
- Stir in nuts. (I use walnuts) Bake in a greased and floured tin for an hour at 350 degrees fahrenheit
