My kids did like gingerbread men however this one has a lot less sugar and they love it just as much. I think it was a cross between a few recipes while looking for a not as sweet alternative. I prefer the Golden Syrup as it has a stronger taste. We like to decorate them with Queen writing icing which works best if the biscuits are cold.
Ingredients (serves 8)
- 65g Butter
- 160ml Honey or Golden Syrup
- 280g Plain Flour
- 1t Bicarbonate of Soda
- 1.5t Ginger
- 1t Mixed Spice
- 1/4t Cloves
- 1 1/2T Milk
- 5 Queen Writing Icing
Method
- In a saucepan melt butter and honey always stirring. Bring to the boil then take off the heat. Let it cool for a few minutes.
- Stir in the rest of the ingredients. Knead. Will be soft at first but slowly add a little flour till it's not sticky and easily rolled. Roll the dough to the biscuit thickness you like. Cut shapes and place on baking tray slightly apart.
- Bake at 180 degree oven for about 10 minutes. Let cool before decorating.
