Delicious lemon and coconut cupcake recipe

Ingredients (serves 12)

2.5 cup SR flour
0.5 cup Sugar
0.25 cup Lemon juice
1 cup coconut cream
0.25 Rice bran oil
1 egg

Method

Combine flour and sugar in a bowl. Add lemon juice, coconut cream, oil and egg. Using a wooden spoon, stir until just combined.
Pour batter in muffin tray and bake for 30 minutes on 190C.
