Delicious lemon and coconut cupcake recipe
Ingredients (serves 12)
- 2.5 cup SR flour
- 0.5 cup Sugar
- 0.25 cup Lemon juice
- 1 cup coconut cream
- 0.25 Rice bran oil
- 1 egg
Method
- Combine flour and sugar in a bowl. Add lemon juice, coconut cream, oil and egg. Using a wooden spoon, stir until just combined.
- Pour batter in muffin tray and bake for 30 minutes on 190C.
