Get your taste buds tingling with this deliciously tropical Lemon and Passionfruit Curd recipe. Perfect when drizzled over pavlovas and tarts, The MoM Team has fallen in love with this tangy delight.

Ingredients:

  • 1/8 cup sugar
  • 50g butter
  • 2 passion fruit, pulp
  • 1 lemon, zested and juiced
  • 2 egg yolk

Method:

In a small saucepan over a low heat melt butter, add sugar and stir over heat until dissolved. Whisk in egg yolk, lemon juice, zest and passion fruit. Continue mixing over low heat until well combined and begins to thickens. Remove from heat and allow to cool.

Use in place of jams, as a filling in tarts or as an icing.

  • I’ve got a recipe for Lemon Spread/Curd that was my Nanna’s. It’s so nice, but a bit labour intensive. I still make it though, because I’ve never found a commercial variety that comes close to it for taste and texture. I’ll try adding some passionfruit next time I make it for something different.
