Lunchbox Quiches - Real Recipes from Mums

These mini quiches are proof that feeding kids well doesn’t have to be expensive or complicated. I was able to make 60 mini quiches for $20 which will last for a while!

All the ingredients were easy to find at IGA, the quality was great and the value was even better. They’re perfect for lunchboxes, can be eaten warm or cold and are endlessly adaptable depending on what you’ve got in the fridge.

Ingredients (makes 60 )

  • 200g Black & Gold shortcut bacon
  • 1 packet (6 sheets) Black & Gold puff pastry
  • 2-3 cups Black & Gold shredded cheese
  • 12 eggs
  • 1/2- 3/4 cup milk
  • Any extras you wish to add eg. parsley, spring onions, small veg like peas or corn

Method

  1. Preheat oven to 200°C and grease cupcake or quiche trays with spray oil.
  2. Thaw out the pastry sheets and chop up the bacon into small pieces.
  3. Fry the bacon in a pan and set aside.
  4. Cut rounds out of the sheets using a pastry cutter or use the rim of an inverted drinking glass.
  5. Press the pastry into the prepared tins and top with a little of the bacon, cheese and any extras.
  6. Whisk the eggs and milk together and pour over the bacon mixture being careful not to overfill.
  7. Bake in oven for 15 minutes until golden and puffed. Enjoy warm or cold.

You can substitute the bacon for ham or tuna or salmon. You can also make these without the pastry. Freeze in an airtight container.
  • Love the idea of quiches for lunches! My kids often hate having sandwiches, it’s just not for them. This is a great option to still offer them something nutritious with protein to keep them going at school. Love that you can make it in advance as well as they freeze well.

  • I wish I could create some simple things like these however, I have two big problems. First of all, things like this can be quite time consuming and they may not freeze well. My kids would probably get bored with this after the first couple days. Secondly, my kids are SO fussy!

  • Delicous yes yes yes and so easy too ! They keep well in the freezer as well so therefore perfect for quick snacks and to add to a lunchbox ! IGAs Black and Gold range is so good and such good value for money ! Thankyou for the wonderful recipe !!

  • Yum – was just thinking to make some mini quiches the other day!
    These are simple to make and find they are good eaten both hot/warm straight out of the oven, or also taste just as good cold. I think I can eat more of these cold!
    Will also add some mushrooms, spring onions and parsley from the garden.

  • quiches are a great idea for lunch boxes and just in general a really great snack. It is something you can make in advance and put in the freezer. They go so well with most meals and are always delicious hot or cold. I love the ingredients in this recipe, it sounds great.

  • Thanks again for sharing your recipe; I am a huge fan of savoury foods and savoury recipes that are easy to make and to eat. I made a batches of mini quiches over the weekend and filled them with lots of different vegetables and lots of different and tasty cheese.

  • I am a massive fan of making savoury quiches and really do love to experiment with different ingredients in quiches. I am planning on making mini quiches this weekend and will make some with peas too; such a good idea. Adding extra vegetables to mini quiches is such a good way for everyone to enjoy vegetables and get a good intake of vegetables.

  • Thanks for sharing your recipe. Mini quiches are nice, but they’re quite hard to keep them warm in the lunchbox and my kids wouldn’t eat them cold. Therefor I would prefer to serve them as an afternoon snack or as side by a dinner. Feeding kids well is important and I would prefer to ditch the bacon and add more veggies (such as spinach and mushrooms, garlic, capsicum etc)
