The best quick recipe that my family just love. Great in lunches, great on an antipasto plater, great by themself and they take no time to make.


Ingredients (serves 4 | makes 12 Mini focaccia)

  • 1 cup Self Raising Flour
  • 1 cup Greek Yogurt
  • Extra Olive oil

Method

  1. Mix the 2 ingredients in a bowl until all combined
  2. Extra olive Oil a 12 hole muffin tin then place about a tablespoon of the mixture in each hole.
  3. Put a little more olive oil over the top of each mixture and press down on it with your finger to fill the mixture around
  4. Add what ever topping you like. I use salt flakes and rosemary, or salt flakes with olives and rosemary or sometimes I use mini tomatoes
  5. Place in the pre heated oven 180 degrees or approx 15min or until golden

  • I love how easy these are and great if you dont have much in the fridge and people arrive. Super easy to whip up and have everyone impressed by your skills in the kitchen at short notice.
    I always have a jar of sundried tomatoes in the fridge and of course some cheese

  • Such an easy recipe to make with few ingredients. Everyone will be happy with mini ficcacias. Good for lunches or parties they are quite versatile and definitely worth making. The family love them and they are so easy to make. An ideal recipe to save for a quick meal. Thank you

  • Thank you for this recipe. It looks so yummy and ideal for lunch or an afternoon snack, parties etc. Lots of toppings you can use, basically anything you would use in a pizza. Mini tomatoes would be great, tasty and healthy too. Easy and quick to do so an ideal recipe to make.

  • I have been wanting to make this recipe as I love the idea! I am planning on cooking today so will make sure I whip a few of these up. I would love some more ideas on toppings that are children friendly – I will try rosemary and salt but they aren’t so hot on tomatoes or olives.

  • Yum. I just happen to have some greek yoghurt in the fridge. So I will be making these today for sure. The options for flavour are great. Today im thinking a little sun-dried tomato and garlic would be good.
