Delicious filling soup perfect for any time of the year.
Ingredients (serves 6)
- 6 Chicken legs
- 3 Carrots
- 3 Large potatoes
- 250g Green beans
- 450g Tin diced tomatoes
- 250g Tortellini
- 3/4 Pot of water
- Salt and pepper to taste
Method
- Place chicken legs into a pot of water and bring to the boil. Skim off foam.
- Dice veg while stock is boiling. Add veg, tomatoes and salt and pepper to pot and simmer.
- Just before serving remove chicken from the bone and return meat to pot. Add tortellini and cook until pasta is tender. Serve with crusty bread.
