Delicious filling soup perfect for any time of the year.


Ingredients (serves 6)

  • 6 Chicken legs
  • 3 Carrots
  • 3 Large potatoes
  • 250g Green beans
  • 450g Tin diced tomatoes
  • 250g Tortellini
  • 3/4 Pot of water
  • Salt and pepper to taste

Method

  1. Place chicken legs into a pot of water and bring to the boil. Skim off foam.
  2. Dice veg while stock is boiling. Add veg, tomatoes and salt and pepper to pot and simmer.
  3. Just before serving remove chicken from the bone and return meat to pot. Add tortellini and cook until pasta is tender. Serve with crusty bread.

  • Very similar to how I make chicken soup, except I’ve always added risoni (pasta). I’m going to try it with tortellini. Thanks for sharing.

    • yeah for sure. it is a great dish and it has been really helpful. my eldest brought home an intense flu from the last week of school and i am just starting to get over it now. this is great, this recipe!
