My daughter turned 1 yesterday and I made this healthy smash cake for her to eat and smash and basically get messy.


Ingredients (serves 1)

  • 5 bananas
  • 1/2 cup Mango nectar
  • 1/4 cup rice bran oil
  • 1.5 cups Wholemeal SR flour
  • 250gm Cream cheese
  • 1/2 cup Blueberry puree
  • raisins to decorate

Method

  1. Combine mashed banana, mango nectar, oil and flour in a large bowl and mix until very very well. Add cinnamon if desire.
  2. Bake in baking pan for 30 minutes on 350 degree. I bake mine in 2 small pyrex bowl and stack them together into a tall but mini cake.
  3. To make icing, beat the cream cheese and blueberry puree to form a pink icing. Spread on top of cooled cake
  4. You can decorate the cake with raisins or fruits. ANything you like.

  • I don’t feel like birthday cakes have to be healthy. It’s once a year, after all.

  • I think it’s a waste to smash cakes. Prefer to eat them and not to waste a crumb.

  • Wow, such an interesting array of flavours with the blueberry, mango and banana!
    Would love to see how this tastes as my kids love all of those fruits but I don’t think they’ve ever had them all together before.

  • Do smash cakes even get eaten? When did they become a thing? I’d not heard of them till a few years ago! Healthy options are always good, I think my kids will like it

  • My bubs first birthday was in iso so she missed out on a cake smash.
    I did make her a cake though and it was so much more effort than this one, I’d welcome making this one as it seems much simpler and it’s only going to get destroyed.

  • Bit too much effort for a smash cake. It’s not like it’s for eating, bub just smashes the bejeezus out it for photos
