Super quick no hassle yummy muffins for afternoon tea!!! Milk and flour can be substituted out to cater for any allergies, for example you can use a gluten free plain flour and any lactose free milk to suit
Ingredients (makes 12 Small muffins)
- 1 and a half cups Plain flour
- 1/2 cup White sugar
- 1 and a half tea spoons Baking powder
- 2 Juicey oranges
- 2 teaspoons Orange rind
- 2 Eggs
- 1/4 cup Milk
- 1/2 cup Greek yoghourt
- 1 teaspoon Vanilla essence
- 1/4 teaspoon Almond essence
- 1/4 cup Poppy seeds
- 2 tablespoons Butter
- 1/2 cup Soft icing sugar
- 2 tablespoons Orange juice saved from the oranges
Method
- Mix dry ingredients together, leaving the icing sugar for later. Sift the flour to get fluffier muffins
- Combine the wet ingredients and then add to the dry ingredients, using a beater to completely combine the mixture
- Using the oranges juiced, grate 2 tablespoons of the rind, and set them aside for the icing Set the mixture aside
- Preheat a fan forced oven to 180 degrees
- Spoon 2 tablespoons of mixture into patty pans, and bake at 180 degrees for 15-20 minutes or until a skewer comes out dry and they are golden brown in colour
- Once baked, cool on a wire rack until completely cool
- Mix the icing sugar and 2 tablespoons of orange juice from the oranges, and drizzle over the muffins.
- Make a cuppa and enjoy!!!
