This is a surprisingly delicious bread that includes great healthy ingredients to help make a nutritious snack.
Ingredients (makes 1 loaf)
- 2.5 cup self-raising wholemeal flour
- 1 tbsp stevia
- 1.5 tsp fresh chopped rosemary
- 3 beaten eggs
- 0.5 cup olive oil
- 0.5 cup greek yogurt
- 6 tbl orange juice
- 1 cup fresh cranberries (or frozen)
Method
- Stir flour, stevia, rosemary in a large bowl
- Whisk eggs and stir with oil, yogurt, orange juice
- Fold in cranberries
- Bake at 180C until skewer comes out clean (approximately 30 minutes in pre-heated oven)
