This is a surprisingly delicious bread that includes great healthy ingredients to help make a nutritious snack.


Ingredients (makes 1 loaf)

  • 2.5 cup self-raising wholemeal flour
  • 1 tbsp stevia
  • 1.5 tsp fresh chopped rosemary
  • 3 beaten eggs
  • 0.5 cup olive oil
  • 0.5 cup greek yogurt
  • 6 tbl orange juice
  • 1 cup fresh cranberries (or frozen)

Method

  1. Stir flour, stevia, rosemary in a large bowl
  2. Whisk eggs and stir with oil, yogurt, orange juice
  3. Fold in cranberries
  4. Bake at 180C until skewer comes out clean (approximately 30 minutes in pre-heated oven)

  • I feel like I’d want to replace the rosemary but I’m sure its lovely

  • Beautiful recipe.
    Personally I don’t really like the taste of stevia so much, it has a bit of a bitter, metallic after taste (don’t get me wrong it’s healthy, I have it at home and have the plants in my garden). I would use therefore yacon syrup instead (while stevia has a GI of 0, yacon has a GI of 1).
