These simple paleo bars are easy to make, and great to eat at work!


Ingredients (serves 1 | makes 8-10 bars )

  • 1/2 cup fresh dates, pitted
  • 1/4 cup shredded coconut
  • 1/4 cup slivered almonds
  • 1 tablespoon coconut oil

Method

  1. Blend the dates with the coconut oil until smooth.
  2. Add the almonds and coconut and mix.
  3. Spread onto baking paper on a tray and leave in the fridge for 10 minutes.

Notes

You can also add some peppermint or mint essence for a minty snack!

  • Wow thank you everyone for the kind comments! I like to add cacao instead of cocoa because it’s full of antioxidants that are usually taken out during processing so it’s better for you and still tastes nice :) The coconut oil I use I don’t believe is refined, if you can get organic that’s always good! Another thing I like to add occasionally is chia seeds for some more crunch! Thank you!!
