This sorbet is quick & easy – a very refreshing dessert!


Ingredients (serves 6)

  • 2 x 400 gram tins Pineapple (retain the juice)
  • 6 Fresh mint leaves

Method

  1. Blend the tinned pineapple (including the juice) with the fresh mint. Pour into an ice cream maker and churn for approx. 25 mins until a thick consistency.
  2. This is nice with a splash of Midori Liquor (for the adults only) or a small scoop with a glass of champagne.

  • Sounds divine. No Ice cream maker here :(

  • I’m making this with lime juice and palm sugar.
    Add this to a dash of soda water and you have a drink similar to the one they serve at Jim Thompson’s silk store in Bangkok.
