These pizza puff muffins are a great way to sneak in loads of veggies. They are a yummy snack or lunch option and great for on the go or lunchboxes.


Ingredients (makes 12 puffs)

  • 2 Cups Flour
  • 1 Tablespoon Baking Powder
  • 1 1/2 Tablespoon Italian Seasoning
  • 1 Teaspoon Basil
  • 1/4 Teaspoon Garlic Powder
  • 1/4 Teaspoon Onion Powder
  • 1/4 Teaspoon Salt
  • 2 Tablespoons Tomato Paste
  • 1 1/2 Cups Toppings
  • 1/2-1 Cup Cheese
  • 1/2 Cup Butter
  • 1 Cup Milk

Method

  1. Preheat oven at 200 degrees, spray muffin tin.
  2. Whisk dry ingredients. Stir in toppings, tomato paste and cheese.
  3. Add milk and butter. Stir until just combined.
  4. Scoop evenly into muffin tins.
  5. Bake at 200 degrees for 20-25 minutes.

Notes

Freezer Friendly, once cooled wrap well and freeze.

  • Oh wow! This is a must try recipe for me as my toddler can enjoy it at home while the older kids can have it for school lunch! And the face that it can be frozen is icing on the cake. Looks like not jist healthy but easy to put together too

    These are a great idea because you can quite literally add any flavours/veggies you want on different days!
    I’ve recently just learnt how much veggies we really should be eating every day and I certainly haven’t been having enough! Thanks for sharing!

  • Oh these are such a clever and great idea! You could make these in advance and keep them for school lunches as a decent snack thats more nutritious than just processed foods. Im sure you could even add some hidden veg and rainbows into this to make it an even better snack
