I ordered this pomegranate, avocado and goats cheese on sourdough from a cafe some time back and decided to make it myself.

Ingredients (serves 2)

  • 2 slices Toasted sourdough bread
  • 1 Avocado
  • 1/2 cup Pomegranates
  • 1/2 cup Goats cheese
  • 2 tsp Almonds
  • 2 tsp Pistachio nuts
  • 2 tsp Smoked paprika
  • 2 wedges Lemon

Method

  1. Mash avocado, crush nuts.
  2. Toast bread and top with avocado, goats cheese, nuts and pomegranate.
  3. Sprinkle paprika on side of plate and serve with a wedge of lemon.
