Very popular with teenagers!
Ingredients (makes 15 cakes)
- 900 grams Peeled potatos
- 1 tablespoon Snipped Chives
- 8 Rashers Bacon (rindless)
- Olive oil
- 1 Small Chopped Onion
- 6 Chopped Tomatoes
- 2 teaspoons Balsamic Vinegar
- 1 1/2 teaspoons Sugar
- 1 Tablespoon chopped parsley
- salt and pepper
Method
- Cook onions for 4 minutes on medium heat until soft. Add tomatoes vinegar and sugar. Cook for 20 minutes, until pulpy.Stir through parsely salt and pepper. Cover and set aside.
- Roughly grate potatos. Place in a sieve and squeeze out excess liquid.
- Transfer potato to a bowl, add chives, salt and pepper and combine.
- Heat oil in a fry pan. Place spoonfulls of potato mix in and flatten. Cook for 3 minutes on each side or until golden. Drain on absorbent paper and keep warm.
- Cook bacon until crisp. Place on potato cakes with the tomato relish.
