Ingredients (makes 15 cakes)

  • 900 grams Peeled potatos
  • 1 tablespoon Snipped Chives
  • 8 Rashers Bacon (rindless)
  • Olive oil
  • 1 Small Chopped Onion
  • 6 Chopped Tomatoes
  • 2 teaspoons Balsamic Vinegar
  • 1 1/2 teaspoons Sugar
  • 1 Tablespoon chopped parsley
  • salt and pepper

Method

  1. Cook onions for 4 minutes on medium heat until soft. Add tomatoes vinegar and sugar. Cook for 20 minutes, until pulpy.Stir through parsely salt and pepper. Cover and set aside.
  2. Roughly grate potatos. Place in a sieve and squeeze out excess liquid.
  3. Transfer potato to a bowl, add chives, salt and pepper and combine.
  4. Heat oil in a fry pan. Place spoonfulls of potato mix in and flatten. Cook for 3 minutes on each side or until golden. Drain on absorbent paper and keep warm.
  5. Cook bacon until crisp. Place on potato cakes with the tomato relish.
