This prawn dish is a quick recipe you can whip up mid week when you a) have no motivation to make dinner or b) don’t have much in the pantry or c) need to inject some fun into dinner for the kids.


Ingredients (serves 4)

  • 1 serve garlic prawns
  • 1 packet soft tacos
  • 1 avocado, mashed
  • 1 punnet cherry tomatoes
  • 1 handful coriander
  • 1 small onion, finely diced

Method

  1. To make the salsa: finely dice onion, tomato and coriander. Mix together in a dish and set aside.
  2. Warm tacos in the microwave for 30 sec (cover with a paper towel to prevent them drying out).
  3. Smear avocado liberally over taco, add prawns and then salsa. Fold up and enjoy!

Notes

Don't like prawns? Substitute with any other meat or alternatively you could falafel.
