I often have this when i am in a hurry as there is very little preparation. By using the oil the fetta is marinaded in means you don't even have to make a vinaigrette.

Ingredients (serves 1)

  • big handful rocket
  • 1 tomato
  • small handful marinaded persian fetta

Method

  1. dice tomato
  2. put lettuce in bowl, add tomato and crumb fetta over it.
  3. pour a little of the marinaded fetta oil over the salad as the dressing

Notes

you can add more ingredience if you wish i.e. nuts, seeds or other veggies, but this is for a very simple quick lunch.
