Ingredients
- 1 1/2 cups Self Raising flour
- 1 1/4 cups Milk (can be skinny or full cream)
- 1 egg
- 3/4 cup cheese, grated
- 3/4 cup corn kernels
- 1 small-med carrot, grated
- 1 small zucchini, grated
- 1 spring onion, thinly sliced into rounds
- salt & pepper to taste
Method
- Sift flour and salt into a good sized bowl
- Beat egg and add to milk. Add to flour and stir in well.
- Whisk until most if not all lumps have gone
- Add cheese, corn, carrot, zucchini and onion. Mix well.
- You may need to add extra milk, to thin out the batter a little..
- Spray frying pan lightly with bran oil (or whatever is your preference), place over a low heat on the stove top.
- Using a table spoon place dollops of mix in pan (allow enough room for the slide to be able to get under them and turn them over)
- When bubbles start to appear, turn over the pancake and heat until cooked through (only takes a couple of minutes)
