A very quick and colourful salad.


Ingredients (serves 6)

  • 1 Lettuce washed
  • 1 Avocado
  • 120g Goats Cheese
  • 100g Semi Dried Tomatoes
  • Vinaigrette Salad dressing of your choice.

Method

  1. Chop avocado into bite size pieces. Strain Tomatoes out of the oil.
  2. Chop or crumble goats cheese.
  3. Put lettuce, avocado, goats cheese and tomatoes into salad bowl and drizzle with vinaigrette salad dressing.

Notes

I use the goats cheese in a roll and crumble it. The quantities are approximate for example if you have a few more or less tomatoes it does not matter. I use a home made vinaigrette for the dressing but shop brought is fine too.

  • I’d love a bowl of this for lunch, but I’d probably swap the tomatoes for olives, and maybe add a little diced cooked bacon.
