A beautiful light traditional Scottish style shortbread.


Ingredients (makes 30 Biscuits)

  • 250g butter softened
  • 1 Cup Icing Sugar
  • 1 tsp Vanilla
  • 2 1/4 cup Plain Flour
  • 1/4 Cup Cornfour
  • Egg white
  • Caster Sugar

Method

  1. Preheat oven to 160 degrees. Begin by beating the butter, icing sugar and vanilla until creamy and pale. Sift in the flours. Mix together with a spoon.
  2. Turn onto lightly floured bench. Knead the dough until it is smooth. Roll out till about 1cm thick and using your preferred cookie cutter, cut the shapes out and place on a lined baking tray.
  3. Brush egg white lightly onto the tops of the biscuits and sprinkle a light coat of caster sugar on top. Bake at 160 for 30 min or until lightly golden. Let cool.

Notes

Amounts will vary depending on the style and size of cookie cutter you use.

  • I used another recipe which only had 4 ingredients and it turned out really good. I was panicking at first because the dough was so soft it wouldn’t even cut and then my daughter looked up utube and apparently you can put the dough overnight before making it . I will try it next time .
