This is a wonderful healthy dessert packed full of goodness with vegetable and (soy) beans for an amazing boost of fibre, vitamins, minerals and protein in a dessert that is actually good for you! Sweetened with dried dates
Ingredients (serves 4)
- 1.5 cups cooked mashed pumpkin
- 300gm SIlken Tofu
- 6 dried dates
- 0.5tsp mixed spice
- 1 tbl milk (or water)
Method
- Add the cooked mashed pumpkin and tofu to blender with milk/water and blend until smooth
- Add 6 dried dates and mixed spice and blend until mixed
- Refrigerate until chilled through!
