A delicious light salad that accompanies anything from chicken or fish to steak or lamb.
Ingredients (serves 6)
- 1 large packet baby kale or spinach
- 1 large packet sliced smoked salmon
- handful walnuts
- DRESSING
- 4 tablespoons avocado oil
- 1/2 cup sour cream
- 1/2 lemon juiced
- 3 tablespoons balsamic vinegar
Method
- Top the kale or spinach with salmon, avocado and walnuts.
- Drizzle the dressing over the top or serve in a sauce bowl on the side.
