This is always an easy or quick lunch for me if I am in a hurry or busy. But also I make them up as an afternoon snack for the kids and myself.
Ingredients (serves 1 | makes 4 Topped corn thins)
- 4 Corn thins
- 8 Cherry tomatoes
- 2 handfuls Lettuce
- 1 tsp Vegemite
- 4 slices Cheese
Method
- Spread Vegemite on all the corn thins. Then cut each tomato in half
- Top with cheese, lettuce and then 4 halves of tomatoes for each corn thin
- Season with pepper and enjoy
Notes
You can always add more salad toppings if you wish or even add some ham or chicken for some extra taste. I have used tuna once but it made the corn thins too soggy.
