This is a wonderful tasty and healthy snack, packed full of goodness, and being easy to prepare means it can be a goto option when you're looking for something different for a lunch time snack!
Ingredients (serves 1)
- 1 Sweet Potatoe (cooked)
- 1 cup Spinach
- 0.5 cup Mushroom
- 2 cloves garlic
- 1 tsp apple cider vinegar
- to taste fresh grated ginger
- to taste fresh grated tumeric
- to taste black pepper
- 0.5 cup cous cous
Method
- Chop and stir fry spinach and mushroom with chopped garlic cloves until spinach is reduced.
- Add chopped cooked sweet potatoe (either left overs or cook in microwave)
- Add apple cider vinegar, grated ginger, tumeric and black pepper
- Prepare cous cous with boiling water and when ready stir into the mixture
