An all round sauce which is great for marinating vegetables and meats. Also a great vegetable and salad dressing.

Ingredients (makes 2.5 cups)
- 2/3 cup American Mustard
- 1/2 cup Dijon Mustard
- 1/4 cup Brown Sugar
- 1 cup Apple Cider Vinegar
- 2 tablespoons Chilli Powder
- 1 teaspoon Black Pepper
- 1 teaspoon White Pepper
- 1/2 teaspoon Cayenne Pepper
- 4 drops Tabasco Sauce
- 1/2 teaspoon Soy Sauce
Method
- Combine all ingredients and gently simmer for about 10 minutes.
- I make the above and pop it into a air-tight container and it tends to keep until it runs out which is not long.
Notes
This recipe was inspired by my dear friend Strach who lives in New England in the States. One of the sauces she made me when I was there was her Southern Mustard Sauce. Marinate tofu in it and bake it with a spray of olive oil and you have this amazing tofu - even I eat it regularly. There is actually some tofu in the salad pictured. Go figure! Drizzle it over your salads to transform the ordinary into the sublime. Decorate baked potatoes. Use it as a dressing on a sandwich. You name it I use it for a lot of things. And along with my beloved chick peas I generally have a batch of this sauce in the fridge.
