Yummy baked pumpkin.


Ingredients (serves 2)

  • 1/2 small butternut pumpkin.
  • 2 tbls cottage cheese or ricotta.
  • pinch shallots
  • pinch dill
  • small amount grated zuchinni.
  • small amount finally chopped capsicum
  • small amount onion
  • pinch parmesan cheese and fresh basil
  • 1/4 cup sesame seeds.
  • to taste. salt & pepper
  • drizzle oil

Method

  1. Cut pumpkin in half. Scoop out seed. Set on a tray with baking paper. Mix all Ingredience except sesame and oil.
  2. Stuff into pumpkin.
  3. brush with oil.
  4. Cover with sesame seeds.
  5. bake on 170c till pumpkin is soft. Then serve

Notes

I really love pumpkin. This recipe is yummy in its own or as a side. The sesame crust gives a nice popping sensation when you bite into it too.

  • I LOVE pumpkin and this recipe looks delicious. Initially I thought a bit tricky maybe, but then I realised you don’t have to cut or scoop the pumpkin itself, and it suddenly looked very very easy. I can’t wait to give this one a try. I think I could eat it by itself!
