Yummy baked pumpkin.
Ingredients (serves 2)
- 1/2 small butternut pumpkin.
- 2 tbls cottage cheese or ricotta.
- pinch shallots
- pinch dill
- small amount grated zuchinni.
- small amount finally chopped capsicum
- small amount onion
- pinch parmesan cheese and fresh basil
- 1/4 cup sesame seeds.
- to taste. salt & pepper
- drizzle oil
Method
- Cut pumpkin in half. Scoop out seed. Set on a tray with baking paper. Mix all Ingredience except sesame and oil.
- Stuff into pumpkin.
- brush with oil.
- Cover with sesame seeds.
- bake on 170c till pumpkin is soft. Then serve
Notes
I really love pumpkin. This recipe is yummy in its own or as a side. The sesame crust gives a nice popping sensation when you bite into it too.
