Vegetarian option for nuggets.


Ingredients (makes 12 nuggets)

  • 600 gram sweet potato, steamed and mashed
  • 1tbls chia seeds
  • 1 tbls flaxmeal
  • 1 tbls coconut butter, melted
  • 1/2 tsp cinnamon
  • 1/2 tsp cumin
  • 1 egg
  • 2 egg whites
  • 1 cup corn crumbs (Orgran make these)
  • olive oil spray

Method

  1. Preheat oven to 190C. Combine mashed potato, chia seeds, flaxmeal, coconut butter, spices and egg until well combined.
  2. Divide into nuggets.
  3. place egg whites in one bowl, and the corn crumbs in another.
  4. coat each nugget into the egg white, then roll in the corn crumbs until well covered. Place on baking tray. Lightly spray with olive oil spray.
  5. Bake for 25 minutes, or until golden brown and crisp.

  • We often tell my son to imagine a food item is nuggets when he says he doesn’t like it. We call him the ‘Nugget Kid’. Now he’s discovered sweet potato as a fave veg he will be in love with these.
