Quick and easy meal idea or finger food for the next family gathering


Ingredients (makes 15 koftas)

  • 500 grams Inghams turkey mince
  • 250 gram packet Hokkien noodles , chopped into 4cm lenghts
  • 1 garlic clove , crushed
  • 2 Kaffir lime leaves ,finely chopped
  • 3 cm piece ginger , peeled and grated
  • 1 stalk lemon grass, outer leaves removed and base chopped finely
  • 1 table spoon fish sauce
  • 1 Tablespoon soy sauce
  • 2-3 spring onions , chopped
  • 1/2 cup coriander , chopped
  • salt and pepper to taste

Method

  1. Pre heat oven to 180 degrees
  2. Prepare Noodles by covering with boiling water, let sit 3 minutes , drain and roughly separate them .. cool slightly
  3. Combine all ingredients in a bowl and mix well .
  4. With clean wet hands roll heaped tablespoonfuls of mixture in to kofta shapes and place on paper lined baking tray
  5. Bake for 30-35 minutes ( turning a couple of times during cooking time ) or until golden
  6. Serve with steamed asian greens and fried rice for a meal or with sweet chilli sauce for dipping if for finger food

Notes

I sometimes make this smaller in a meatball shape to serve at parties but made as a larger kofta are great for an easy meal with some fried rice and asian greens Lemongrass and kaffir lime leaves can be used fresh or you can use ready made paste or the jars ,approx. 2 teaspoons would be used
