These super quick banana muffins only need three ingredients, and make a delicious morning or afternoon treat.


Ingredients (makes 12 Muffins)

  • 3 cups Self raising flour
  • 375ml Lemonade zero sugar
  • 2 Bananas

Method

  1. Mash banana in a bowl, add flour and combine. Pour in lemonade and stir until mixture forms a sticky batter
  2. Spray muffin tin with oil and spoon mixture between 12 muffin holes.
  3. Bake at 180 for 22 minutes or until golden

  • I love this! It’s just so basic and I bet it tastes amazing! It would be a great one to help my kids to prepare as there isn’t a lot of fiddly details. I reckon a dash of cinnamon would also go lovely with this and give it a nice lift.

  • Lemonade in many of my baking recipes is so good because it makes the baked treats light and fluffy. I also love to play with different ingredients in muffins and baked goods. Selecting and using fruit in season makes good sense. Buying fruit in season is also good for the food budget.


    • We search for the best grocery stores that sell lemonade on special. We do use lemonade in cooking and in recipes and buying it at a good price is so essential. Lemonade is also good to have in the kitchen for adding to drinks; it is a terrific mixer for drinks.

  • I’ll have to give these a try. First time I saw someone using lemonade in baking I thought they were crazy. The scones were crazy good. I always have bananas that need to be used. I’ll keep this recipe in mind for the next lot of bananas.
