This boccaccini basil salad is quick, easy, light and delicious.


Ingredients (serves 2)

  • 2 truss tomatoes
  • 3 small boccaccini balls sliced
  • 4 large basil leaves chopped
  • 1 shallot chopped
  • drizzle olive oil
  • drizzle balsamic vinegar

Method

  1. Slice tomato and sprinkle with pepper.
  2. Slice boccaccini and put on tomato.
  3. Chop basil and shallots and sprinkle over the top.
  4. Pour olive oil and balsamic vinegar over top.
  5. Enjoy!
