Ingredients

  • 1 large sweet potato
  • 2 x 185 gram cans tuna, drained
  • 1 cup breadcrumbs
  • 2 tbls plain flour
  • 1 spring onion, finely chopped
  • 1/3 cup mint leaves, chopped
  • 1 zest of lemon
  • 1 egg
  • olive oil, to cook in

Method

  1. Peel, dice and steam sweet potato
  2. In a large bowl place the sweet potato, tuna, breadcrumbs, plain flour, mint, spring onion, lemon zest and egg and mix to combine.
  3. Heat frypan to medium-high heat and add a little olive oil. Shape the tuna mixture into large patties and cook for 4-5 minutes, each side, or until golden and warmed through.

Nice served with a leafy salad

  • Oooh yum I love tuna patties and the sweet potato gives them a yummy, healthy twist as well. These look quick and easy to make which is always a bonus. They would be perfect with a tasty garden salad on the side. Fantastic, cheap to make, tasty, healthy meal. Thanks so much for sharing.

  • Tuna patties are very popular in my house – but I can’t get my kids to eat sweet potato, no matter how healthy it is. This sounds like a great recipe to try to sneak it past them! A variation on a favorite! Like all mums, I’m quite shameless about sneaking nutrients in.
