White Christmas is a bit of a tradition in our house, but instead of doing the usual slice, I rolled the mixture into little balls this year and they turned out so cute.

These little bites are sweet, crunchy and festive, and they come together quickly. Once the Copha melts, it’s really just a matter of mixing, rolling and chilling. The pistachios and cranberries add colour, the coconut gives that classic Christmas texture, and the condensed milk ties it all together.

Ingredients

  • 2 cups full cream milk powder
  • 2 cups Rice Bubbles
  • 1 cup shredded coconut
  • 1/2 cup pistachios
  • 1/2 cup dried cranberries
  • 1 tin condensed milk
  • 1 block Copha

Method

  1. Melt the Copha
  2. Place all dry ingredients + Condensed Milk into a large mixing bowl
  3. Add the Copha and stir well until combined.
  4. Roll into balls, pop into patty cases, add some sprinkles if you like and chill until set.

  • Oh these look so festive and adorable! I love that they come in their own individual little muffin liners too. Ive never heard of the ingredient copha before though and wondering what exactly it is? Otherwise cute recipe kids can easily help and make too! Thanks for sharing it with us

  • I really do like the twist of having delicious White Christmas in bite size sweet treat balls. A plate of these would indeed look delicious served up at Christmas time. They would looks so terrific alongside mini bite sized Christmas puddings. We do like to indulge in eating sweet treats at Christmas time.

  • I’d like to try this white Christmas balls recipe as it looks quick and easy to make. The ingredients are simple and easy to find, and the mix of coconut, pistachios and cranberries sounds tasty without being too sweet. They would be easy to prepare ahead of time, travel well, and make a great share plate to take along to a Christmas party.

  • These look super cute! A great way to have a little sweet treat after Christmas Day lunch. You could also gift wrap them to give away. I haven’t eaten Copha since the 80’s. It’s not the healthiest but once in a blue moon wouldn’t hurt. I love the added pistachios in this recipe. Yum!

  • Thanks for sharing your recipe. Personally I’m not a fan of Copha as it is a hydrogenated oil that is extremely high in saturated fats and I’m a bit afraid to use it for my husband as he has a high cholesterol and is under close supervision of the cardiologist for his heart. I’m also not a fan of condensed milk as it is very high in calories and processed sugars. It would be interesting to try to replace the copha & condensed milk with light creamed cottage cheese and if needed add some raw honey or organic maple syrup or yacon syrup
