This delicious zucchini, apple and banana muffin recipe is courtesy of Zoe Bingley-Pullin.


Ingredients (makes 10 muffins)

  • 2 cups wholemeal or spelt flour
  • 2 tsp baking powder
  • 1 tsp bicarbonate of soda
  • 1 apple, grated
  • 2 medium zucchinis, grated
  • 2 ripe bananas
  • 1 cup rice-bran oil or virgin coconut oil
  • 1/4 cup honey/maple syrup or brown rice malt syrup (optional)

Method

  1. Pre-heat oven to 170 degrees and line 10 muffins pans with paper cases.
  2. In a bowl, sift the flour, baking powder and soda together.
  3. Add the honey/maple syrup, apple, zucchini and stir well. Add the bananas and mix together.
  4. Stir in the oil until the mixture forms together.
  5. Spoon the mixture into cases and bake for 12 minutes or till cooked.

  • Delicious and no egg or dairy so great for allergies in our house.

  • What a great recipe! Will be making this for my fussy toddler but I would definitely adjust the amount of oil in the recipe and maybe add eggs. I feel like the oil being called for in the recipe is way too much!

  • Is there a mistake in the amount of oil for this recipe?
    Everything was going fine until I added the cup of coconut oil, it looked too much and I probably should have followed my instinct and used less but I preserved with the recipe exactly.

    The muffins wouldn’t cook properly no matter how long I cooked them for. They are soggy in the middle and taste like oil.

    What a sad waste of beautiful ingredients and my time. Sorry to be harsh but I’m really annoyed.

  • I followed the instructions to a tee and they came out a slimey, oily mess! Have tried cooking for double the recommended time but there isn’t enough dry ingredient for the muffins to set. Don’t waste your ingredients!
