Yummy, vege smuggling meal! One bowl clean up!


Ingredients (serves 8 | makes 1 family sized quiche)

  • 5 eggs lightly whisked
  • 5 rashers bacon diced
  • 3 grated zucchinis
  • 1 grated carrot
  • 1 chopped onion
  • 1 cup self raising flour
  • 1 1/2 cups grated cheese
  • 1 diced tomato

Method

  1. Pre heat oven 180c.
  2. Put all ingredients in a bowl and mixed well together. Pour into a greased quiche dish.
  3. Cook for 30-40 minutes.

  • So…. it’s sort of like a zucchini slice, or a frittatta? I do like that it doesn’t have the pastry, as that’s the least healthy part of q quiche. And i have to say that both quiches and zucchini slice are very popular in this house. Easy to make vegetarian too.
