This is a wonderful, tasty, easy, healthy recipe that gives lots of vegetable protein and fibre with some great spices for anti-oxidants.
Ingredients (serves 1)
- 0.25 chopped onion
- 0.25 chopped tomato
- 1 tsp garlic minced
- 1 tbl tomato paste
- 0.25 cup cooked kidney beans
- 0.25 cup cooked chickpeas
- 0.1 cup cooked mung beans
- 0.5 tsp basil
- 0.5 tsp oregano
- 0.25 tsp tumeric
- 1tbl grated cheese (optional)
Method
- Stir fry chopped onion, tomato, garlic and tomato paste
- Stir in beans, basil, oregano and tumeric
- Spoon mixture into dish (add cheese topping if desired) and bake until warmed through
