lovely crunch salad fresh with flavours.


Ingredients (serves 4)

  • 1/4 cabbage
  • 1 Carrot Peeled
  • 1 Cucumber
  • generous handful coriander
  • generous handful mint
  • generous handful basil
  • packet dried noodles (for salads)

Method

  1. chop carrot, cucumber and cabbage into thin fine strips
  2. wash and tear up herbs
  3. mix together and add noodles just before serving
  4. Use your favourite dressing

Notes

gluten free if you use gluten free noodles or take out the noodles. I make my own asian dressing with lemon, soy garlic etc. great to serve with BBQ's and fish.

  • I would add a few peanuts for extra crunch
