A breakfast dressed to impress anyone!


Ingredients (serves 2 | makes 4 halves)

  • 2 avocados halved
  • 4 eggs
  • half lime juiced
  • half teaspoon Dijon musttard
  • Generous pinch cayenne pepper and s+p

Method

  1. Scrunch up foil on a baking tray to make a nest for the avocado to sit.
  2. Halve avocado, remove pip and scoop out a bit of the avocado to make room for the egg.
  3. Smear some Dijon mustard and quarter of the lime juice into each one.
  4. Crack the egg into each scooped out space in the avocado.
  5. Top with some cayenne pepper, salt and pepper and place in a hot oven for 15 minutes.

Notes

Delicious sprinkled with some grated Swiss cheese, chopped bacon and chopped tomato too. Add this on top of the egg before baking.

  • My neighbour and I make this regularly for lunch. We skip the mustard and lime and often sprinkle some cheese over the egg before we pop it in the oven. I love to eat it with homemade Dukkah !
