A modern, Baileys inspired take on a campfire classic. Pass the spoon because this melty marshmallowy treat will have you wanting s’more!

Ingredients (serves 2)

  • 100ml Baileys Original Irish Cream
  • 100g crumbled digestives or shortbread
  • 100g mini marshmallows
  • 120g marshmallows
  • 100ml chocolate sauce

Method

  1. Add the crumbled shortbread to the bottom of a jar. Dollop on marshmallows (as many as you like!)
  2. Heat the chocolate sauce and pour it into the jars. Probably add a bit more chocolate sauce.
  3. Sprinkle on the mini marshmallows. Bring on the Baileys – pour it over your creation. Now toast the marshmallows with the blow torch until melty and delicious.
  4. Ready…steady….dig in! Last one to finish does the washing up.

  • Now this looks like an amazing weekend treat to enjoy and eat. All of delicious calories you would consume. I love the idea of this, it sounds absolutely amazing and full of flavour and delightfulness. The recipe looks simple enough to make too. I know where I am heading this weekend, to the bottle shop for a bottle of Bailey.

  • This looks so very decadent! It would be a bit tricky and messy to make and eat, but would be so worth it if you have the gear to do it justice. I do not have a blow torch though, so would be a bit hard without having one to use.

  • Too easy and so yummy!
The kids would love these so am definitely going to make it with them on our next camping trip.

  • Okay, now this looks absolutely amazing! And sinful! We love making s’mores when camping, so I love this variation of a usual simple camping treat to make a great dessert. Who doesn’t love Bailey’s? This would be perfect for an adult get together or even a romantic treat with hubby after the kids are in bed!

  • Just make sure you don’t leave it anywhere your children can get at it – it will taste wonderful to them as well but they will get sick. Lovely recipe for me to try when next I am entertaining.
