This pumpkin and feta salad is very easy to make and also very healthy!
Ingredients (serves 5)
- Half Jap pumpkin
- Half a bag Salad mix
- Fetta Cheese
- Drizzle Balsamic glaze
Method
- Cut pumpkin into small squares and drizzle balsamic vinegar, then bake on 180 fan forced for 25 minutes. Remove from oven and let cool.
- Place salad mix in bowl add cooled pumpkin and toss.
- Cut up desired amount of feta and also add to bowl and serve.
