Ingredients

  • 2 ripe bananas, mashed
  • 1/2 cup brown sugar
  • 1 egg
  • 1/3 cup butter
  • 1 cup flour
  • 2/3 tsp salt
  • 1/3 cup chopped walnuts
  • 1 tsp baking soda
  • 1 tsp baking powder

Method

  1. Preheat oven to 180 degrees. In a bowl sift flour, baking soda, baking powder, salt. Set aside.
  2. In another large bowl, cream both sugars with the butter. Then thoroughly mix in the egg. Slowly add in the flour mixture. Again thoroughly combine.
  3. Then mix in the mashed banana and walnuts. Mix together.
  4. Prepare your baking tray by lightly greasing. Scoop about 1 1/2 tablespoon of batter onto the baking tray. Make sure they are evenly spaced. Bake for 10 minutes or until slightly dark brown in color.

  • Oooh I’m always looking for new recipes for over ripe bananas for the weeks my kids don’t like them lol. I usually make banana loaf or muffins so these cookies will be a nice change. Love the walnuts for some extra crunch. Really looking forward to giving these a go 🙂
