This beetroot jelly is one of my favourites.


Ingredients (serves 8)

  • 1 can Beetroot
  • 1 packet Port wine jelly
  • 500 gms Hot water
  • Squirt Canola spray

Method

  1. Boil water and melt jelly crystals.
  2. Spray a glass pie dish.
  3. Drain the rest of the beetroot juice into the jelly and mix through.
  4. Layer the beetroot on the bottom of the pie dish covering the bottom of the dish. Pour the jelly over the beetroot.
  5. Cover and refrigerate until set. Cut up into squares.

  • How interesting! I never thought that beetroot would work out to be a flavour of jelly.
    Not sure that I’d try it as I don’t like beetroot to begin with but was definitely interested in seeing what ingredients were in the recipe.

  • This is a confusing recipe. Is it sweet or savoury. Not sure if I’m keen to try it. 500gms of water or 500mls?

  • A very interesting concept – do you just serve it with a salad or do you have a special meat dish that you serve this with? I love beetroot in so many ways, especially cold beetroot soup with buttermilk, as well as the traditional borscht.

  • Very different sounding Jelly has anyone else tried this


    • My Great Aunties did jellied Beetroot and I watched my Mum do it a few times. Canned Beetroot is normally in vinegar. They used to drain the vinegar into a bowl and put the beetroot into the bottom of a particular glass dish they always used. They used to dissolve some gelatine in boiling water in a cup, add it to the vinegar and stir it through. then pour it over the beetroot, put the lid on and place it in the fridge. The vinegar acted as a preservative so It didn’t have to be eaten for a few days.

  • thankyou so much cynthea. i loved and shared this and will give it a go. i reckon this will look pretty if you could turn it upside without wrecking it. i think i will try it. great creative jelly idea for sure
