I make these as they are nut free and a healthier alternative to the kids lunch boxes over junk food, packets of chips etc. All the ingredients can easily be purchased at IGA
Ingredients (serves 1 | makes 12 )
- 1 cup Coconut Dessicated
- 1 cup Apricots Dried
- 1 tbsp Cacao
- 1 tbsp Apricot Jam (optional)
Method
- Blend dried apricots up in a food processor or Ninja for 4 minutes.
- Add coconut and cacao and blend for another minute.
- Pour mixture into bowl and roll into small balls firmly pressing together all the mix. If the mix is too dry add a very small amount of water or a tablespoon of apricot jam to rehydrate apricots so they stick together.
