I make these as they are nut free and a healthier alternative to the kids lunch boxes over junk food, packets of chips etc. All the ingredients can easily be purchased at IGA


Ingredients (serves 1 | makes 12 )

  • 1 cup Coconut Dessicated
  • 1 cup Apricots Dried
  • 1 tbsp Cacao
  • 1 tbsp Apricot Jam (optional)

Method

  1. Blend dried apricots up in a food processor or Ninja for 4 minutes.
  2. Add coconut and cacao and blend for another minute.
  3. Pour mixture into bowl and roll into small balls firmly pressing together all the mix. If the mix is too dry add a very small amount of water or a tablespoon of apricot jam to rehydrate apricots so they stick together.

Notes

To make more double quantities of each ingredient.

  • Always good to have something like this to snack upon.
