Ingredients (makes 21 )

  • 2 cups mashed potato
  • 3 eggs
  • 1 cup grated cheese
  • Additional grated cheese to top for serving

Method

  1. Mix all ingredients - mashed potato, eggs and cheese in bowl and season.
  2. Add a spoonful of mixture into mini cupcake maker.
  3. Cook for 15-20 mins depends on the size of cupcake maker - but I would advise just keep checking as all cupcake models are different.
  4. After cooked top with additional cheese before serving.

  • I love this. But instead of going to all the trouble of placing in a cupcake tray, and avoid extra washing up, I just mix the grated cheese through the mashed potato. Same result, less washing up. Winning!!!
