Here is a yummy chicken fajita recipe that mum can make for all the family!
500g skinless chicken breast fillets
2 red onions, sliced
1 tbsp oil
1 tsp paprika
1/2 tsp ground cumin
1/2 tsp ground coriander
Juice of 3 large limes or lemons
1/4 tsp chilli powder
1/2 red capsicum, diced
2 tomatoes, diced
400g can cannellini beans, drained and rinsed
2 tbsp chopped parsley
1 small red chilli, deseeded and diced
2 cups lettuce, shredded
150mg natural yoghurt
150g cheddar cheese, grated
Sea salt and fresh ground pepper
8 warm tortillas or pitas
Preheat oven to 180o C.
Slice the chicken fillets into 1cm wide strips and place in a bowl. Combine the oil, paprika, cumin, coriander, chilli powder and 1/2 the lemon or lime juice and pour over chicken. Stir through an allow to marinate for 5 – 30 minutes.
Place the diced capsicum, tomatoes, chilli and cannellini beans in a bowl. Add the rest of the lemon or lime juice and parsley and season with salt and pepper to taste. Set aside until ready to serve.
Heat a heavy based fry pan over medium to high heat. Add the chicken and any surplus marinade to the pan and cook until golden brown.
Warm the tortillas or pitas in the preheated oven for a few minutes then place on a plate and serve with the lettuce, chicken, bean mix, cheese and yoghurt, allowing everyone to make up their own.
