Great as a side dish but also good as a main. Easily bulked up with some chicken pieces if serving as a main.
Ingredients (serves 4)
- 1 cup Rice
- 1 Chicken stock cube
- 4 Rashers bacon
- 1 Onion
- 1 Egg, scrambled
- Mixed vegetables, optional
Method
- Prepare the rice as usual adding the stock cube to the water
- Dice the bacon and onion and fry in a large pan (use a pan that will fit the rice as well)
- Add the cooked rice to the pan and mix well
- Mix through the scrambled eggs. Add the vegetables (optional)
Notes
I usually prepare the rice in the microwave which makes this recipe even easier.
