These Choc Chip Cornflake Cookies are a tasty chocolatey twist on a classic cookie. Perfect for morning tea and of course school lunches!


Ingredients (makes 30 Cookies)

  • 250g Butter - Room Temp
  • 1Cup Caster Sugar
  • 2 Eggs
  • 2 Cup Self Raising Flour
  • 1/2 Cup Chocolate Chips
  • 1/4 Tsp Salt
  • 5 Cups Cornflakes

Method

  1. Preheat the oven to 180C and line 2 baking trays with baking paper.
  2. Use electric mixer to beat the butter and sugar in a bowl until pale and creamy. Beat in the egg. Fold in the flour, chocolate chips, 1 cup of crushed cornflakes and salt, then mix until well combined.
  3. Pour the 2 cups of cornflakes in a bowl. Spoon slightly heaped tablespoonfuls of the butter mixture into the cornflakes. Toss the mixture gently in the cornflakes to coat and form into balls.
  4. Place the cookie balls, on the prepared trays. Flatten slightly with a fork. Bake for 15-18 minutes or until golden. Cool the biscuits for 10 minutes on the trays before transferring to a wire rack to cool completely.

Notes

When you make these Choc Chip Cornflake Cookies you can substitute the chocolate for sultanas if your after a more classic cookie. You can also substitute the cornflakes for Just Right, Sultana Bran or even Coco Pops!

  • Thank you for this version of a cornflakes biscuit. I was wondering where does the extra cornflakes go. One is crushed and put in the mixture, two cups that the mixture is tossed in. Where is the last two cups used.

  • If I made these with chocolate in them they would be gone before they were cold. If I put raisins in part of a batch might get some. Our biggest chocoholic will at least leave them alone.
