White chocolate coconut ice eggs. I also make smaller eggs for small baskets.


Ingredients (makes 12 large eggs)

  • 300g (2 cups) pure icing sugar
  • 1/4 teaspoon cream of tartar
  • 395g can sweetened condensed milk
  • 3 1/2 cups cups desiccated coconut
  • yellow food colouring
  • white chocolate

Method

  1. Combine sifted pure icing sugar, cream of tartar, sweetened condensed milk and desiccated coconut
  2. Separate 1/4 of the mixture add a few drops yellow food colouring, roll into small yolks.
  3. Add white around shape and mould, leave some plain, and dip some into melted white chocolate.

Notes

I make this for some friends who can't eat chocolate.

  • This looks so real , yet if it weren’t for the condense milk I may try it as it is so sweet . You would never believe hub uses condense milk in his coffee than using fresh milk. Quick without needing to add sugar as its already there !

  • I haven’t had coconut ice for years! I loved it as a kid, mum used to make it regularly, until I was old enough to do it myself. Might have a go at making some, introduce my kids to it
